For a few years now, we’ve been meaning to kick our daily Starbucks habit for good. But the truth is, we like espresso over a cup of coffee and we REALLY like this one very specific drink at Starbucks: The Starbucks Doubleshot on Ice. Specifically with two pumps of classic and just a *splash* of 2%. Wow, just typing that out loud feels nostalgic. I’m getting tingly. I can smell the coffee as I type this. Also, yes I say ‘we’ as in Bryan AND I. We are that annoying couple that gets the same drink. Here, I’ll roll my eyes for you. We are *this* close to sharing a Facebook account. That’s the next level up and then matching haircuts and finally, sharing the same set of polo shirts. That’s when you know the transformation into ONE has been complete.

This year with quarantine, it not only made it easier but essential to kick our daily Starbucks habit. We started without an espresso machine (you can find my other coffee recipes here like Magic Iced Coffee and Honey Cinnamon Latte!) but then for Mother’s Day (unprompted by the way) B got me this espresso machine and let me tell you: GAME CHANGED. And yes, this IS the caffeine typing. It has taken over now; first my body, now my mind.

Since we are dummies it took us a minute to realize that we could make our favorite drink at home. We already knew what was in it, so we started with a few iterations: sugar straight into the hot espresso, then we got fancy and used simple syrup and then the final iteration: the shaker. You GOTTA shake this drink like a cocktail to make it absolutely perfect. It’s foamy, frothy, not too sweet and it will go straight for your bones. If you’ve never had this drink before, one caveat: it’s the equivalent to me saying ‘boozy’ for a cocktail. It is very espresso forward, so if the taste of espresso or coffee ain’t your thing, don’t worry. This drink may not be for you but I’ve got more coffee ideas brewing!

Starbucks Doubleshot on Ice At Home

Ingredients

(for a venti size serving)

4-5 shots of espresso (Starbucks version has 5 shots, I do 4)
2 tbsp of simple syrup*
2 tbsp of milk (or to taste)
3 cups of ice

Equipment

Espresso Machine OR Bialetti Espresso Maker
Cocktail Shaker OR Mason Jar
Iced Coffee Cup

Brew your 4 shots of espresso (or really strong coffee, but like really strong) and pour over ice in a shaker. If you don’t have a shaker, a mason jar will do just fine. Add 2 tbsp of simple syrup (less or more! this is just my preference for not too sweet but sweet enough) and then add milk to taste. You can always pour the milk after (this is how Starbucks does it) but I like to just shake everything at once to make it all super cold. Then once everything is in — SHAKE IT! I do this very dramatically and loud because of I need attention but you can just do it a few times to make sure it really gets everything good and cold. Then pour into your cup over fresh ice and enjoy! It’s the easiest drink to make and will easily become a favorite.

*For the simple syrup: I make a batch about once a week and while that sounds like I’m very domesticated, I’m not — it’s actually the easiest thing you can do and it makes your iced coffee 10x better! Take equal parts water and equal parts sugar and dissolve the sugar into the water over medium-high heat by constantly stirring. Let it bubble for a few seconds but never boil. Once the sugar is fully dissolved (the syrup will be clear) take off the heat and let cool for 30 minutes or so. Store covered in the refrigerator for about a week. Easy peasy!

By the way, if you are looking for iced coffee cups — these are my absolute favorites! They are from Amazon and they are double-walled so they keep everything nice and cold. They also don’t sweat because they are double insulated. I accidentally bought the 32 oz option because I wasn’t paying attention and that’s the tall one you see two photos up. It is GIANT but it does fit in my car cup holder, so that’s something. Probably the one you would want is the 16oz, the one pictured above, it’s a bit easier for an everyday cup.
